Osetra (Oscietra or Asetra) caviar derives from the Osetra sturgeon (Acipenser persicus or Acipenser gueldenstaedtii), weighing 50-400 pounds and living up to 50 years. The color of sturgeon caviar varies from warm brown to green-gray, dark blue to black and even yellow. Sturgeon caviar has a nutty flavor and is highly prized as an elite caviar.
The Osetra sturgeon is much smaller than the Beluga species (Huso huso). It has firmer texture compared to more delicate Beluga caviar.
Many consider it the golden child of the Sturgeon family. In fact, Osetra caviar is certainly the most popular and highly demanded variety of Caspian caviar. Usually, its size and price range somewhere between those of Beluga and Sevruga caviar. The world's finest Osetra caviar is found in the Caspian Sea. It is produced in Russia (Russian Osetra Caviar).
Malossol (lightly salted) Osetra is the finest one and the most expensive.
Experts say that the variations in taste occur because the Osetra is a bottom feeder. Thus, its caviar takes on the taste of whichever the fish feeds on. Because of the eggs appearing in different colors, Osetra caviar stands out as a famous elite caviar.
Russian Black Osetra Caviar is packed into glass jars of 113 g (4 oz) each and has medium-size grains.
It has a remarkably pure, crisp, "nutty" flavor with a color that varies from golden yellow to dark brown. Many people find it to be the most delicious of all sturgeon caviar.
